Warm lamb wraps

You can use the left over lamb to make these warm lamb wraps.  You can balance up the ingredients allowing for how the meat was cooked.

Ingredient:
  • 1 wrap per person
  • greek natural yoghurt
  • your leftover meat,  pulled apart
  • fresh coriander
  • Pepper, salt

optional: relish, mint leaves, chilli, tomato cut thinly or diced, red onion thinly sliced, lemon wedges

Method
  • Warm up the meat either in the microwave or in a pot on the stove. In any case, be careful not to dry it, you will need to warm it up in stages if using the microwave or keep a check on it if on the cooktop. You may have to add a few spoons of water if the meat is quite dry. Cold lamb is not tasty, so aim for warm to hot.
  • Open a wrap and place over a flat area, add the meat, a spoon of yogurt, a few strings of fresh coriander. Here you can choose to add some harissa, pickles, chilli or small pieces of tomatoes.
  • Roll/close the wrap. You can use tooth picks to help it remain closed.
